INGREDIENTS<\/h3>\n

    \n
  • 7 ounces semi-sweet or bittersweet chocolate (not more than 62% cacao), coursely chopped<\/li>\n
  • 1\/3 cup milk<\/li>\n
  • 2 tbsp sugar<\/li>\n
  • pinch of BAESURIS\u00ae coarse sea salt<\/li>\n
  • 2 tbsp flavorless Extra Virgin Olive  oil<\/li>\n
  • 1 cup heavy cream<\/li>\n
  • rose pepper and BAESURIS\u00ae<\/span> fleur de sel<\/li>\n<\/ul>\n

    PREPARATION<\/h3>\n<\/div>\n

      \n
    1. Blast chocolate in a food processor until very finely ground. Leave it in the processor bowl.<\/li>\n
    2. Bring milk, sugar and salt to a simmer in a small saucepan, stirring to dissolve the sugar.<\/li>\n
    3. Turn on processor and pour sweetened hot milk through feed tube, processing for 15-20 seconds or until chocolate has melted.<\/li>\n
    4. Add olive oil,<\/li>\n
    5. Process for another 10 seconds to blend thoroughly.<\/li>\n
    6. Scrape mixture into a large bowl and let cool about 10 minutes.<\/li>\n
    7. Beat cream until it just starts to hold a very soft shape (not even close to stiff).<\/li>\n
    8. Fold 1\/3 of cream into chocolate.<\/li>\n
    9. Fold in remaining cream. For smoothest possible mousse, stop folding the moment the cream is incorporated into the chocolate.<\/li>\n
    10. Immediately scoop into six pretty dessert glasses.<\/li>\n
    11. Refrigerate until mousse sets, about 1 hour, or until ready to serve.<\/li>\n
    12. Grind a little rose pepper and springle FLOR DE SAL<\/strong> BAESURIS<\/strong>\u00ae over each serving.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<\/div>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

      • 200g chocolate preto<\/li>
      • 50g de azeite virgem extra<\/li>
      • hortel\u00e3 qb<\/li>
      • pimenta rosa qb<\/li><\/ul>

        PREPARA\u00c7\u00c3O\u00a0<\/h3><\/div><\/div>
        1. Separe as gemas das claras.<\/li>
        2. Bata as gemas com o a\u00e7\u00facar at\u00e9 obter uma gemada fofa e esbranqui\u00e7ada.<\/li>
        3. Noutra ta\u00e7a bata as claras com uma colher de caf\u00e9 de flor de sal at\u00e9 estarem bem firmes.<\/li>
        4. Pique o chocolate em pedacinhos e leve ao microondas com o azeite durante cerca de 1 minuto na pot\u00eancia m\u00e9dia. Mexa at\u00e9 estar completamente derretido (se for necess\u00e1rio leve mais uns segundos ao microondas).<\/li>
        5. Junte o chocolate \u00e0s gemas batidas, misturando bem, e envolva as claras batidas, mexendo delicadamente.<\/li>
        6. Coloque a mousse numa ta\u00e7a ou distribua por ta\u00e7as individuais e leve ao frigor\u00edfico durante pelo menos 4 horas.<\/li>
        7. Na altura de servir salpique com a restante flor de sal e um pouco de pimenta rosa mo\u00edda.<\/li>
